This is simply a lemon chia pudding mix as the base and then topped with a mixture of berries, sliced almonds, mint leaves, and coconut flakes.

 Ingredients

• 1 cup coconut milk .

• 1 1/2 cup unsweetened original almond milk

• 3 tablespoons granulated stevia/erythritol blend

• 1/2 cup chia seeds

• 1/2 cup lemon juice freshly squeezed

• 1 1/2 cup unsweetened original almond milk

• 1/2 cup chia seeds

• 1/2 cup lemon juice freshly squeezed

Instructions

Place all ingredients in a blender and pulse until blended.

Pour 6 ounces equally into 4 serving bowls and refrigerate for at least 5 hours before serving

When serving, place a ¼ - ½ cup of berry mix of choice and sliced almonds on top.

Sprinkle with mint leaves and coconut flakes.

Net carbs 5-6 gm depending on berry mix used.
